Arugula, coriander, and loquats today! Our first harvest this season!
I added the coriander and arugula to my salad, along with some cucumber and onion, a generous serving of olive oil, lemon, and some salt and pepper. It was delish!
And the loquats were a sweet and refreshing snack!

Loquats contain vitamins A and C, several B vitamins, and beta-carotene, which is an antioxidant.
